Great performance, craftsmanship and design!

[This review was collected as part of a promotion.] After looking at a lot of different pizza ovens hitting the market, none captured my attention like the Ooni Karu 16. Growing up in my father's pizza restaurant, you learn early on about how restaurant equipment should perform; the daily use, abuse and the ability for consistent performance. I have re-visited my passion for pizza and was looking for a top of the line gas oven to provide even heat. For a consumer product, Ooni was the best. I did get the gas adapter since its a cleaner and more consistent fuel. The small wood box would be ok for a few pizzas but not a lot since temperature regulation would be difficult. I loved the temperature reached by the Ooni. I cook at the recommended temperature of 750F which performed well with the hydration of my dough. The oven is well insulated and solid in construction. You do need to preheat the oven for at least 30-45 minutes to get the stone to proper temperature to give a good char or "leoparding" on the bottom of your pie. Use a laser temp gun to make sure the stone is at proper temp before using - 650F +. I'm also thinking of replacing the stone with a pizza steel for better heat conduction. I like to try different approaches on performance. I'm still trying to gauge the amount of pizzas I can cook per 20# tank of propane. Probably pretty good but it's cold where I am right now so performance is affected. Probably about 10 pizzas if you make, eat, socialize, then cook more again. I do reduce the temp slightly to save gas while entertaining, or turn off if we're doing dinner then late night rounds of eating around the fire pit. For maximum performance, stack you pizza making with multiple boards, then cook back to back. The Ooni is definitely priced on the higher end but you get what you pay for and for me, quality was most important. The less insulated your oven is, the more gas you will use - some competitor ovens are not built with this in mind. Since I've only had mine for a couple of months, I'm still learning the nuances of the oven itself. I make my pizza in my home oven with great results, but need the higher temps for different crust performance. In the pizza shop I usually cooked at 575F to 625F. My dough was made for that temp. Remember pizza lover's, the dough is the key. The ingredients are all the same; flour, water, yeast, sugar and salt but the process is what makes the variations. Once you have that figured out, the equipment will help you hit a homerun - and the Ooni pizza oven will get you there every time:)

It's a pretty amazing oven. Rather than go into what's already great about it, because it is, here are a few things that could be improved:\n1) The built in thermometer is sort of pointless. Yes, it gives an overall temp, but the temperature of the stone is what matters, and the variance can be quite large between the readings.\n2) It's heavy. Really heavy. I don't like storing it outdoors, so I have to lug it inside after each use. To do this, I have to remove the baking stones b/c they contribute to the weight. It's not easy to get them out. I use a screwdriver to pry the square one up, but I'm worried I may chip the stone or dent the metal. An easier method would be welcomed.\n3) It burns wood very quickly, which can be sort of expensive. I've used it twice and gone through around a third of a box of hardwood pieces.\n4) Loading wood often leads to it spilling onto the stone. This is probably the most frustrating aspect of using the oven. Getting it really hot requires an almost full tray, but it is shallow on the front side, so pieces often tumble out. I then have to open the front hatch and use the brush to swat it out and try more carefully to place it in the hopper.\n5) My first few pizzas tasted weird on the bottom. The stones must have some residual chemicals that cause the strange aftertaste. They do address this in the user manual, but even when the instructions were followed, it didn't completely eliminate the flavor.\n6) The glass front does tend to get covered with soot, making it sort of useless. This started happening when it got really hot inside the oven. I'll try dialing it back next time.\n7) Accessories are highly recommended (wood, heat-resistant gloves, a peel, laser thermometer, fire starter and a brush) but the products on their site are really expensive. I'm sure they're high quality, but it feels like I was being upsold and overcharged after an already expensive purchase. For those of us who don't already own a prior pizza oven, Ooni should sell an add-on kit with everything included at a reasonable price to make it more palatable.\nAll that said, I'm excited to make pizzas for years to come!

For a long time I wanted to buy a pizza oven that I could use anywhere I wanted, regardless of time and place. I chose very carefully and for a long time, but I never chose between different brands, but only between different models, because the brand is only one Ooni. When this model came out, I hesitated a bit because it was the most expensive of the brand, but I definitely liked it so much that the money didn't matter. When I received it, I couldn't wait to open it and close it, and I was so happy with the result. A few days later I gathered my whole family to test Ooni Karu 16 and the result was amazing. The pizzas were more than perfect, they were baked quickly and evenly, I can safely say as a pizza fan that even in Italy I have not eaten such a good pizza. We have already gathered with friends several times and have pizza parties and everyone is very impressed with the oven and the amazing pizzas that are made.In the short time we have had the oven, we have already made over 100 pizzas, and we have a lot more to do. Thank you Ooni for giving us the opportunity to bake pizza like the real Italian pizza masters. With the best regards from Bulgaria and the many happy friends who tried Ooni pizzas.

I've had friends over and I've taught them to use it. Everyone seems to love it. I've even sous vide steaks and finished them in the pizza oven and let me tell you it's the best steak I've ever made, the crust is incredible, and the inside stays juicy and tender. I got the sizzler plates and I've tried just about everything in there. I've made eggs and hashbrowns with ham… I've even tried making a frittata in the round one, and it came out absolutely perfect. We tried making focaccia bread, and it is absolutely incredible. Perfect crust with a nice chewy texture on the inside. I highly recommend the accessories that they sell, because they work so much better than cheaper versions I tried first. Trust me it's worth the investment. That said, the multi-fuel option of the Karu-16 mitigated concerns of being confined to one fuel source. \n\nWith having one wood-fired cook under our belt; I see no need to explore other fuel options to cook given the ease of the wood-fire experience. However, it would be foolish not explore the other possibilities. \n\nIn brief, Ooni has done all the experimenting; all we just followed the instructions from assembly of oven, to dough preparation offered by the calculator, and recipes. \n\nWe are definitively ecstatic about our Kari-16 Multi-fuel Oven….i hope this information is helpful. I had been using a pizza stone in a home oven for a long time, achieving more than convincing results. However, it's only thanks to the Ooni Karu 16 that I've managed to create a final product that has nothing to envy about the wonderful pizzas of southern Italy. Initially, I was skeptical about cooking other types of food in my Karu 16, particularly steaks—expensive items that can easily overcook—but I quickly changed my mind. There are no real negatives about this oven; perhaps it takes some practice and skill to master the right temperatures (especially when using wood/charcoal) to cook different foods to perfection. All in all, I can't recommend this product enough - I am extremely happy with it!

I've had this for a bit now but today I finally got to use it. I've had an Ooni 3 (when it was Uoni), I replaced that with an Ooni Pro which I just replace with the Karu 16. Comparing the Pro to the Karu is like comparing a Ford to a Mercedes. You can make great pizza with the Pro but you must work. It's hard to get the stone to temperature and hard to keep it at temperature. The Karu has a bigger fire box so it's easier to get it up to temperature. Plus the oven is insulated so it holds the heat in. This results in a much hotter stone, so you get much better crusts. Both cook quickly but the Karu is unforgiving. Look away for a second or two and you have a blackened crust, but it still tastes good. I use the same 60 percent, cold fermented dough I always have but I felt that it cooked much better and thus it tasted much better in the Karu.

When I would take the door off to check my pies, flames would shot out the back. \nMy new oven is much softer and using lump charcoal and wood chunks, it is much easier to keep the temperature and no dangerous flames. The over door being glass eliminates the need to open multiple times to check how my pies are cooking. The oven also eliminated some of the blackening of the rim of my crust. The deflector and flames are inches above not directly on top of my pies. Can’t wait to explore using the cast iron grill pan for wings and steaks.

It's fascinating how quickly the oven heats up! \n\nThe first time we tried it the results weren't great - user error - we used supermarket-bought dough which we didn't realize we needed to proof at room temp for a few hours. I'm not a big fan of flour or course semolina under the pizza so I put the dough on a sheet of parchment roughly cut down to size, this makes sliding the pizza in and out a breeze.\nWhat took 8+ minutes in a oven is down to 2 in the Karu as I have been baking at night in bellow freezing temperatures.\nHave to turn up the flames between each pizza and turn it down a bit while cooking to prevent burning the top, I think with normal outdoor temperatures this issue will resolve itself.\nI think the wood and coal will be great for longer cooking times like bread and meats.

Don't bother with charcoal, good supply of wood burns fast and hot - the digital thermometer keeps you constantly up to speed with when to pop another log into the firebox, and only a matter of seconds for the flames to lift the heat back up. Worked equally well with chicken skewers & steak, so very versatile and useless addition to the garden. Only con, quite weighty and awkward to move. But overall a great bit of kit!
