I'd been looking at the Hexclad pans for months as well as an Analon set of frying pans (which didn't have the stainless steel hi-lo mesh/induction) and so was very pleased to see these on sale.\n\nWe like them both for how well they are made as well as the searing ability they offer. They do have an engineered "dimple" in the middle of the pans to hold oil there and this is a brilliant solution to having oil run towards the outside.\n\nThey clean up easily, the eggs don't stick (when you let the pan heat up properly) and they feel very solid in hand.\n\nThe only thing I could wish for is more coverage up the sides of the stainless steel disk on the bottom, but I know that would make these pans heavier (I have the 12" version of these pans and it is indeed a bit too heavy already).\n\nIn short, I hope to be cooking with these pans for many years to come.

I’ve had this skillet for about 9 months now. There was a slight learning curve but watching the how to videos were really helpful. Yes things stick into the mesh but that’s the point. This hybrid pan is good at making fond. And it’s so simple to add chicken stock or wine or butter to clean the mesh and make a quick and easy pan sauce. I always thought pan sauce were what chefs made- but now I make one whenever I seat some chicken or steak. It’s definitely on the heavy side, but I have a wolf stove and it works great on it. Holds the heat and oil in the middle. I thought that was gimmicky but then I noticed that ask my other pans don’t hold the oil in the middle. They done in the center; soo I ultimately use less oil than I regularly would. My husband thought I spent a lot of money on fancy prime steaks- but they were regular steaks prepared in Anolon X with pan sauce. Made my regular cooking look and taste better! and it holds a lot of food!

I've been cooking with Anolon products for a very long time. Their titanium non stick line is my all time favorite but long gone. I just recently retired the 1 1/2 quart sauce pan that was my go to risotto cooker. I've also had to retire the 10 inch nouvelle copper skillet that I used extensively and delivered countless numbers of mains and sides. I care for my Anolon stuff well and only hand wash and never use metal utensils to cook. This leads to the purchase of the X line. I was intrigued and in need and now own the 8 and 10 inch skillets. I'm underwhelmed. The cross hatch of wires protrude the surface and frankly make the non stick properties worse and make cleaning more of a chore. Fritattas, omelets, and pilafs, and small burgers, stick to the wires and frankly don't deliver better searing than any of the other Anolon skillets I've owned, and limit the overall versatility of the product. I'm not terribly pleased but disappointed that the brand released an overhyped breakthrough that really doesn't deliver on the stove.

This hybrid non-stick is everything I've been searching for--finally! I have standard anolon non-stick pans, that I like but my main one didn't last past 1yr and can't handle high heat. The hybrid, however, seems like it will last much longer due to the material and works great on higher heat, with the aluminum bottom that seems to leave it very well protected from typical wear on the outside. The hybrid grid design works as advertised and so far has been easy to clean as well! This is the only hybrid NON-TOXIC pan that I've been able to find and is well worth the price! I've only had it for about 1 month now but have been able to cook numerous different foods, all without issues. It's great at quickly crisping up veggies, with very little oil, without getting obliterated with stuck on, burnt food - like cast iron. I can't recommend this enough and wish I had more!

I originally bought the saucier, having never used one before. Greatest thing since sliced bread. And it was on an incredible special as well so I was chuffed. Then this Saute and saucier came up as a twofer special so I jumped at it. The saucier is lighter than I imagined yet the Saute is slightly heavier. I have arthritis and have had surgeries on both hands but am able to handle these two easily enough. I tried cast iron cookware and just can’t handle it safely as it’s too heavy. I do appreciate I got very lucky to buy three absolutely brilliant pieces of cookware at an unbelievable price. I’m having a blast cooking up a storm, the husband thinks it’s great as well and I finally got the courage to try making risotto and the saucier is what makes it absolutely perfect. These pieces are fantastic. Highly recommend them.

This 8 3/4 pan is perfect for 2 ppl, heats evenly and food stays in middle of pan which is why I bought this pan. It behaves like cast iron minus the weight and need to season it. Cleaning is a breeze using dish washing liquid and a Scrub Buddy. I don't use the dishwasher to clean any of my pans. On to the non stick—isn't happening even with added fat/oil. The stainless steel mesh is a good idea but it feels raised in the pan when I use a silicone spatula. I would replace all my pans if it wasn't for this issue

I have used analon skillets next to my set of copper cookware for decades. Every few years I replace my analon skillets just because they get so much use. My copper cookware just get polished and they’re ready to go after all these years. Why the X surface? I cook everyday, I do not cook meat. The analon skillet is great as always. It’s a shame I could only get them with this fake X surface glued on the bottom. Please consider releasing a line without it.

I bought the 10" and the 8" combo frying pans a few weeks ago, it sears a ribeye steak nicely as well my burgers came out with crispy edges and deliciously juicy inside. But the reason I purchased the pans was to fry eggs in the morning for my 3 kids and myself. The downside is that the eggs got stuck on the bottom of the pan while fry them. You can't make over easy and if it's sunny side up eggs you will need to crisp the bottom in order to remove them. I don't mind crispy on the bottom of my eggs but if you need to flip the eggs over for over medium eggs then you will need to crisp them again to remove the egg without breaking apart. Very disappointed for the price. I'm looking to purchase a nonstick pan elsewhere just for eggs.

Your pan is perfect for searing, I did a steak. But, my bad, I was trying to replace a Meyer 9.5 in standard non-stick frying pan I damaged (also my bad). I'm working with this one, fish is a tough go and I think a fried egg will be really hard but I'll continue with pre-heating and a little extra oil to get it as non-stick as I can. [This review was collected as part of a promotion.] I love that this pot is so essential perfect product. Very clean and when I made a pasta sauce, with shrimp sauteing onions and garlic, which came out bursting with flavors. Just last night my husband made farfell pasta shells, called Sopa de pescado. Which has tons of shrimp, clams, and mussels. The flavors were delicious and savory. I love that this is saucier is just right size, depth and weight. Very easy to clean. The AnolonX is very easy to handle. I'm very excited with my pot.

The pots and pans brand are my favorite. I still have original pots and pans that were bought 30 years ago. Still using, but needed to replace some pieces. I like them, but they are a lot lighter weight. I need some more time cooking with them, but I’m sure I will be very happy with them.

Investigated a number of pans before deciding what to replace my trusty (but damaged) Calphalon pans with and decided on AnolonX. Love the even heating and the sear capabilities for protein, and they clean up easily, IF you follow the instructions!

Bought the Anolon X 2 pan set. Put through the paces and loving both. Hard sear meats and vegetables without high heat, AND non-stick easy to clean, fantastic. Pan broiled sirloin, Seared skirt steak for fajitas, seared chicken for salads, seared breakfast potatoes and onions. Outstanding pans. Expensive, maybe, but it doesn't cost, it pays. THANKS! After watching all the people on FB and Instagram, I decided to take the plunge. And OMG, I do not cook much, but at least once a week, I cook fresh skinless salmon and two or three times a week, I cook eggs. I could not believe, the salmon, first the color and the evenness. I love the assorted sized, and the lids are a plus. I love how they are not too heavy. I have issues lifting some pans and these are no problem. I bought this pan 1 mo. ago, not expecting anything incredible. But I was so pleasantly surprised! Oil stays in the middle. Pan is thick enough to cook correctly, not to mention it is PERFECTLY FLAT ! I love the long handle and the well designed lid. Quality construction.
