It uses natural gas to heat its stainless steel venturi-style burners for every 6-inch-wide griddle section, and six snap-action thermostats control every 12-inch-wide section individually, so multiple foods can be cooked on the same surface. A recessed piezo spark ignitor warms the surface at 200 to 450 degrees Fahrenheit. Temperature probes embedded inside the 1-inch-thick polished griddle plate result in fast response times and even heat distribution. If the pilot flame goes out, the system automatically shuts down.The Magikitch'n MKG-60 commercial griddle is lined with tapered splashes to prevent hot fat and oil from sloshing over the sides.
